The Mashtun is a large, cylindrical vessel (sometimes up to 20 feet in diameter) with a slightly raised perforated floor. The contents are kept agitated by an arrangement of Stirrers revolving around a central vertical axis. Malt Grist is added to the Mashtun together with a quantity of Water from the Copper at about 65°C and the resultant Brew agitated by the Stirrers for several hours. The liquid is then strained off into the Underback and more water, at a higher temperature, is added to the Mashtun and the Brew stirred for several more hours. The liquid is again strained off into the Underback. The process is repeated yet again with an even higher temperature of water but the resultant liquid is strained off and retained for use as the first liquid for the next load of Malt Grist. During mashing, the Enzymes continue to break down the complex starch molecules into the simpler sugars and the resultant sweet liquid is called the Wort.
