The Dolphin Hotel returned to private ownership in February 2003 and since then a huge refurbishment has taken place to provide new stylish, art-led accommodation. 'Bleu' the new grill and wine gallery serves sumptuous grilled meat and fish. The hotel now has two bars; 'Oak' the hotel bar/lounge and 'Fruit' a High Street champagne style bar.
